- 2 eggs
- 1 medium banana
- 1 tsp. vanilla extract (optional)
- Dash of cinnamon (optional)
Completely mash banana and combine with eggs, vanilla, and cinnamon. In a nonstick frying pan on low to medium heat, pour batter into desired pancake size. Smaller ones are much easier to flip when the time comes. Let the pancakes cook on one side until they are firm enough to flip and bubbles appear on the top. Then, flip them and allow the other side to cook.
When fully cooked, these pancakes are somewhat like crepes. They are thin, moist, and flavorful! They taste great plain, or you can top them with pure maple syrup, honey, almonds, walnuts, or more banana. It’s only about 250 calories for the whole batch (if plain), so you can eat the entire thing without feeling guilty!
