Clean Pineapple Shrimp Fajita Recipe

Shrimp Fajita

Ingredients:

(For one fajita)

  • 1/4 cup precooked frozen shrimp (without tails)
  • 1/2 cup fresh pineapple chunks
  • 3 slices red bell pepper
  • 3 slices orange bell pepper
  • 3 slices red onion
  • 1 8″ whole wheat tortilla shell
  • 1 Tbs. plain nonfat Greek yogurt
  • chopped tomato
  • chopped spinach
  • pinch of salt
  • pinch of pepper

Directions:

Put shrimp in a bowl of lukewarm water to thaw for about 10 minutes. In a nonstick frying pan, cook peppers and onions with salt and pepper on low to medium heat for 10 minutes. In another nonstick pan, on low to medium heat, cook pineapple and shrimp until soft and warm (about 5- 10 minutes). Warm tortilla shell in microwave for 10 seconds. In the tortilla, layer shrimp, peppers, onions, pineapple, tomato, and spinach, and top with yogurt. This fajita is a great way to eat all your food groups: whole grain, protein, fruit, dairy, and vegetables! Add some clean guacamole to get your healthy fats too!
