Clean Cornbread Recipe

(For 15 squares)

  • 1 cup whole wheat flour
  • 1 cup cornmeal (preferably whole grain, but regular will work)
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 3 Tbs. honey
  • 2 eggs, beaten
  • 1 cup plain nonfat Greek yogurt
  • 1 can corn, drained

  • Preheat oven to 400ºF.
  • Combine flour, cornmeal, baking soda, and salt in a large mixing bowl.
  • Add honey, eggs, yogurt, and corn. Do not over mix!
  • Pour batter (it will be very thick) into a greased 9×13 baking dish.
  • Bake for 20 to 30 minutes. After 20 minutes, the top will be brown, but the inside might not be fully cooked.
  • Serve while warm, and pair with veggie-loaded turkey chili for an amazingly delicious meal!

  1. I’ve never head cornbread before but it looks really good! And you’ve got a clean recipe as well? Awesome! I’ve pinned it straight away, can’t wait to try it out.

  2. I just made twice so far – they are FANTASTIC. Just to let you know, when I subbed regular nonfat yogurt instead of greek yogurt, they rose so much more and got more voluminous!
